Cheater Chicken Pot Pie

I mentioned in my Menu Plan Monday post that I am a fan of Quick and Easy, Semi Homemade, food as I work full time, have a (almost ) 4 year old and am 33 weeks pregnant and its like 107 outside so no slaving over the stove for me!

This recipe is super simple and delicious!

Cheater Chicken Pot Pie

Most of the Ingredients!

1 box Pillsbury Pie Crusts (I have found these are easier than pre made crusts)
1 cup cooked chicken(My favorite is to use leftovers from a Rotisserie Chicken it adds such good flavor)
1 can Cream of Chicken Soup
1 soup can of milk
1 bag frozen mixed veggies


  • Set the Pie Crusts out to get to room temperature
  • In a medium size bowl pour the bag of frozen veggies, the can of Cream of Chicken Soup, the can of milk and the chicken. 
  • Stir together until all moistened. 
  • Add pepper if you would like.
  • Gently pat one of the pie crusts in the bottom of a nine inch pie plate.
  • Pour mixture into the crust and gently unroll top crust and pat down, tucking in the sides.
  • Pierce crust with a fork a few times to vent.
  • Bake at 450 degrees for about 10 minutes, checking for a golden brown crust. 


In our oven it takes about 15 minutes but our oven runs hot and sometimes I have to cover the sides with foil while the center finishes.

Enjoy! I like to serve with cut up apples and cheddar cheese slices.

*If the thought of canned cream of chicken soup turns you off, Mel's Kitchen Cafe has a great Homemade Cream of Chicken Soup recipe. I want to try it sometime, but not at 6pm when I am trying to get dinner on the table!

Menu Plan Monday!



A very hot week indeed and somehow I ended up with like three oven meals. I blame pregnancy cravings and the fact that well they are all pretty easy!

Salsa Chicken in the Slow Cooker with Black Beans and Corn
Mom's Casserole with Cornbread Muffins
Cheater Chicken Pot Pie(I'll post a recipe..totally a Semi Homemade Tiff Style!)
Homemade Pizza(to use leftover spaghetti sauce), baby carrots
Pancakes and Eggs, Bacon, OJ
S loopy Tacos!(Way easy!) and Oven Fries
Leftovers or Maybe use our Tony Roma's Groupon..

Wishing Well Planter

So my hubby likes to keep busy and he found plans for a wishing well online and set to work. I cannot take much credit for this project, though I did pick out the paint colors!

This is the well completed but not painted:




We got the plans from the website Build Eazy

This is a picture of it after we painted it Yellow and White.




It houses different plants through out the year. I need to get a little bucket and rope to tie to the spindle. Yes, it really turns.

A fun project and probably about $30.00 to $50.00 dollars. The Metal Strapping for the well costs around 20 but we only used a 1/4 of it.

So that means we have more strapping for the treasure chest I want to build!(hint, hint DH!)

Menu Plan Monday

Another Week! Time seems to be flying and it is getting hot, so I will not be planning so many oven meals, more like BBQ and Crockpot!

Cheese Ravioli with Italian Sausage Sauce, French Bread or Garlic Toast, Veggies
Tortilla Pie, Veggies and Dip
Breakfast Burritos with  3 Pepper Mix and Bacon, Hashbrowns, OJ
Steak with Homemade Macaroni and Cheese(Never made it last week)
Chicken and Stuffing, Apple Slices
Date Night..I have a Tony Roma's Groupon!

Mini Chocolate Cream Pies




I made these for my anniversary last week. There fun and there is no messy cutting or serving, just dig in with a trusty fork.

Ingredients:





Six Pack of Mini Graham Cracker Pie Crusts(I finally found them at SuperWalmart.)
1 3.9 oz Pkg. Chocolate Pudding Mix
1 Tub Cool Whip(Thawed)
1 cup milk
Chocolate Sprinkles(not pictured)

Instructions:

1. Pour pudding mix and one cup milk in a bowl and whisk throughly. (The pkg. will say 2 cups, but ONLY one.) It will be thick.

2. Fill each pie crust about 1/4 full of the pudding mix. You will have pudding left.




3. Add about half the cool whip to the remaining pudding.Whisk till the pudding turns mousse like.
4. Layer the mousse filling on top of the pudding in the pie crusts and spread to cover.


5. Take remaining cool whip and top each pie crust until the mousse layer is covered.
6. Sprinkle with chocolate sprinkles and chill till ready to serve.




Makes six mini pies. This can be made as a large pie or with a chocolate or Oreo crust, all are delicious.

This would be so good with mini Oreo crusts, I am on the lookout for those but not sure they exist.

Menu Plan Monday




OK, I have been slacking off. So this week I need to get back on track! Linking this up with Orgjunkie's Menu Plan Monday for motivation and inspiration.

Crockpot BBQ Pork Sandwiches, Coleslaw, Chips
Fajitas and Mexican Rice, Carrots and Ranch Dip
Spaghetti with Homemade Sausage Sauce, Green Beans, Garlic Toast
Breakfast for Dinner: Bagel Sandwiches and Hashbrowns
Hot and Ready, Carrots and Ranch Dip(I have to orientate 20 College freshman at work, I will need a break)
Chicken and Veggie Stir-fry, Cheddar Cheese Slices
Steaks or Chicken on the grill, Homemade Macaroni and Cheese from Smashed Peas and Carrots
